Meatballs with vegetables

The meat is passed through the mincer. The pumpkins are washed, cleaned, the stalks are removed and put on the large grater. Onions are cleaned, washed and finely chopped. Peel a squash, grate it and squeeze the juice. Garlic cloves are cleaned and ground. Wash the dill and parsley and finely chop. Mix the meat with the vegetables prepared above, the eggs and the chopped greens. Sprinkle the sifted flour and mix until smooth. Season with salt and pepper. With the hand greased with oil, form meatballs of the right size. Fry in hot oil on both sides.

How to fry appetizer meatballs correctly?

Fried meatballs in a frying pan, in hot oil

I chose a deeper pan in which I heated a layer of 2 fingers of oil. We do not fry in oil "traces" but in an oil bath. I heated the oil well (approx. 175 C). If it is not hot enough then the meatballs will boil in it instead of frying and soak in fat. I didn't crowd the pan because the meatballs need space, not to stick to each other. In addition, if we put large amounts of cold food in the frying pan, then the temperature of the oil bath will drop suddenly. The fire under the pan must be large because these meatballs are small and fry quickly & # 8211 we do not risk remaining raw in the middle.

IMPORTANT: if the oil is well heated then the crispy crust will immediately form on the surface of the meatballs and this will work as a barrier that will not allow the meat to soak in oil!

Here you can see simple meatballs without breadcrumbs. After about 2 minutes I turned them on the back to fry evenly.

I continued similarly with the meatballs given in breadcrumbs. Between laps the oil must be expected to heat up again to 175 C and must be refilled if its level drops too much.


Greek meatballs with 2 types of minced meat. You have to try them, it's well worth it

I love Greek food, which is why I often prepare this meatball recipe. Because everyone who tasted the Greek meatballs told me that they are delicious, I decided to share the recipe with you. It's not heavy at all.

Ingredient:

  • 500 gr minced pork, 0.5 teaspoon oregano
  • 500 gr minced beef, 100 gr bread, Feta cheese to taste
  • 150 gr onion, 2 cloves garlic, wheat flour to taste
  • 1 tomato, 3 tablespoons vinegar, 2 teaspoons olive oil
  • Salt, pepper to taste, 4 teaspoons mint, sunflower oil to taste

Method of preparation:

Mix the two types of minced meat. Soak the bread in water, drain and add to the bowl of minced meat. Mix everything very well.

Onions, garlic and peeled tomatoes are given through a coarse grater. Add these ingredients to the minced meat mixture. Also add oregano, vinegar, black pepper and olive oil. Knead the minced meat.Add chopped mint and mix again. Put the minced meat in the fridge for at least 1 hour. After 60 minutes, remove the minced meat from the refrigerator and form small balls out of it.

In each ball add a piece of feta cheese. Pass the meatballs through the flour and fry in a hot pan with sunflower oil.After the meatballs have been fried, take them out on a paper towel to absorb the excess oil.

Greek meatballs can be served with fresh vegetable salad. They are suitable for a family dinner or a festive event. Good appetite and increase cooking!

Method of preparation

Carrots, zucchini and potatoes are cleaned, washed and passed through a small grater. Garlic cloves are cleaned and ground. Dill and parsley are washed and finely chopped.

Mix the meat with the vegetables prepared above, with eggs and chopped greens. Season with salt and pepper and mix until smooth.

With a hand greased with a little oil, form meatballs of the right size.

Fry in hot oil on both sides.

How to prepare mashed potatoes:

Peeled and chopped potatoes are washed in cold water and put on the fire in a large saucepan. Add a good teaspoon of salt to 1 kg of potatoes. Leave it to boil over medium heat, under the lid, until the fork enters them easily.

Crush the potatoes with a hand press adding 100 g butter and 100 ml warm milk, stirring until smooth.

See how you can prepare some fasting meatballs, with mushrooms, very tasty and suitable for meals during the fasting period. It is a healthy but also economical recipe.

Ingredient:

  • 1 kg Champignon mushrooms
  • 2 medium potatoes, 1 carrot
  • 4 cloves garlic, green parsley, dill
  • Salt, 4 tablespoons breadcrumbs, oil, pepper

I used canned mushrooms but you can use any other mushroom (eg mushrooms) but they must be cooked to make the meatballs softer.

Method of preparation:

  1. First we have to boil the potatoes in their skins - when they are cooked, they are passed under a stream of cold water and peeled. Pass and make a puree.
  2. Mushrooms are given through a meat machine or blender, as well as finely chopped vegetables, parsley and dill, salt and pepper - mix and add the breadcrumbs - if it is a wetter composition, add 1 tablespoon of breadcrumbs
  3. Mix well and refrigerate for 20 minutes
  4. Heat a frying pan with oil and form the meatballs (round or flat) - fry on both sides and leave to cool on an absorbent napkin

They can be served with puree, polenta or pickles. Good appetite!


Rice and vegetable meatballs & # 8211 You don't even feel like they don't have meat

We need: 300g boiled rice, 250g mixture of frozen Mexican vegetables (or fresh vegetables from the garden), 1 egg, salt and pepper to your taste and a few fresh parsley leaves, oil for frying meatballs.

It is prepared as follows:

Put the rice to boil until it has softened well, well, and then strain the water. We take a pan in which we add 2 teaspoons of butter and we put the vegetable mixture to cook for a few minutes, then we add the boiled rice. Season with salt and pepper, followed by freshly chopped parsley with beaten egg.

Mix all the ingredients well and form the tasty meatballs that we fry in hot oil until golden brown. Once they are done, we take them out on a damp napkin to drain the oil and they can be served as a garnish or as a main course!

Potato meatballs (fasting)

Vegetable meatballs are ideal when you are fasting or following a vegetarian lifestyle or simply want an alternative to classic meatballs. You can make them from potatoes, eggplants, zucchini, carrots and any other vegetable combinations you like.

The recipe we propose to you today is an extremely simple one, of potato meatballs, aromatic and delicious. You can make the fasting version, without egg, or you can opt for the classic version, with egg that binds the composition.

  • 1 kg of potatoes
  • 1 bunch green onions
  • 2 cloves of garlic
  • salt
  • pepper
  • 1 carrot
  • dill
  • parsley
  • 200 g breadcrumbs
  • 2 eggs (optional, if you do the fasting option you can omit them)
  • frying oil

Wash the potatoes and carrots. Put them to boil, whole, in a pot with water and salt. Bring to the boil until the fork enters them.

After the vegetables have boiled, drain the water and let it cool. Peel the potatoes, as well as the carrots. Pass the vegetables with a mashed utensil or you can give them through a small grater, like beef salad.

Finely chop the onion, garlic, greens and add them over the potatoes and carrots. Season with salt and pepper and put the eggs, if using. If you make fasting meatballs, you can replace them with 2 tablespoons of breadcrumbs / semolina.

Shape the meatballs in your hand. You can make them round or flat, as you prefer. Roll the potato meatballs in breadcrumbs or flour, then fry them in hot oil until golden brown on all sides.

If you choose to bake them, place them on a tray lined with baking paper and sprinkle with a little olive oil. Put the tray in the oven until the meatballs are browned, taking care to turn them over after 15 minutes.
