The chicken is cleaned, washed, drained and cut into cubes of the right size. Heat the oil, add 2 green onion rings cut into not very thin slices, the capsicum pepper cut into strips. Let it cook for 2 minutes. Add the hot pepper and finely chopped garlic. Allow 1 minute to leave its flavor, then add the chicken breast. Allow to harden on all sides, add balsamic vinegar, sugar and sauces. Because the chicken breast I used was sour and not very tender, I put a lid on the pan and let it cook for 15-20 minutes. If I didn't use the lid, I risked the sauce falling too much and burning. When the chicken breast was tender, I stopped the fire.

Separately, in a small cast iron skillet, fry the cashews for a few minutes until they become crispy.

For serving, I simply boiled basmati rice in salted water, according to the instructions on the package. Serve the chicken dish with basmati rice, put fried cashew nuts on top and cut the rest of the green onions into slices and sprinkle with walnuts on top. May it be useful to you !!!

Chicken breast in cream sauce

Heat the fat in a pan and fry the meat cubes over medium heat for about 7-10 minutes, stirring periodically, until they are evenly browned. Salt to taste.

Add the sweet cream and let it boil for a few minutes, until the sauce thickens.

Serve with low-carb vegetable garnishes, such as cauliflower or spinach.

Always choose raw cashews, avoiding fried and salted ones. It is preferable to leave cashews in water 2-3 hours before eating them, as they will be easier to digest.

After soaking for a few hours in water, the cashews are mixed in a blender with a double or triple amount of water.

a little honey (optional).

Put all the ingredients in the blender and mix until you get a creamy milk.

How to make it at home: buy 500 grams of raw cashew nuts, put them in the oven for 10 minutes, leave them to cool and mix them in the food processor with very little sea salt, for 5-10 minutes until it releases its oils and turns into a creamy paste. Ioana 8 years ago - 28 January 2009 16:03

Re: Chicken breast with cashew nuts

you can find them in the district where you also find nuts, in large bags from half a kg upwards, not in small bags. I don't know the company, unfortunately. of all these types of nuts I like the most. cashews are written on the bags, but you will quickly recognize them by their shape

Re: Chicken breast with cashew nuts

OK. And the mushrooms with which I could replace them, I don't give a damn about them, but if they can't be replaced, I'll put them in a smaller quantity. I'm tempted by this recipe but I don't know if I'll like it, I haven't eaten any of these combinations. I'm also tempted by pasta salad, chicken and oranges. Anyway, if I decide, I think I'll only make a portion.

Re: Chicken breast with cashew nuts

I like to experiment with new tastes and hazelnuts even though I've never eaten them before, but now that I've done I can say that I don't give a damn about this recipe. I can't say I didn't like it at all and I threw it away. the food . After it was ready, I just picked the mushrooms and threw them away, I ate the rest with pleasure, I really like the chicken breast marinated with chilli and soy and I think I will do it again. As for the hazelnuts, it remains to be seen whether I add them or not. I will try the salad with pasta, chicken and oranges because I have nothing to lose, I keep thinking about it.

it's still good that you found something you like in this recipe, the marinated chicken can be combined with other ingredients and a completely new food comes out.

when you make the salad, take out a small portion and combine it with a few hazelnuts and see if you like it or not, don't add them anymore. it will be good anyway, if you really don't like the hazelnut combination

Re: Chicken breast with cashew nuts

I found cashew nuts at 200 gr at Kaufland they were hidden near the drinks section (they thought they went well with a beer as they were not exposed on the shelf with peanuts. I also like them a lot. At Kaufland they have the most spices exposed compared to other supermarkets and yet I did not find cardamom (baclava) I studied all the recipes and stocked up on all the spices (cloves, ginger, chilli.) Who knows when and what comes to mind to do. I have the ingredients at hand.

Ioana 8 years ago - 3 February 2009 13:54

Re: Chicken breast with cashew nuts

cardamom is ground, from the Fuchs company, we only found it at Auchan so far.

for about 2 weeks I found fresh coriander in our country and I was so excited and I found with amazement that I don't like the taste at all, it's like incense or so it seemed to me. I put it in small quantities in salads so I wouldn't throw it away, but I'm glad it's over.

Ardelean Ancutza 8 years ago - 3 February 2009 13:58

Re: Chicken breast with cashew nuts

You know that word: "what you expect with pleasure you don't eat with sweets". Unfortunately we do not have Auchan.

Ioana 8 years ago - 3 February 2009 14:10

Re: Chicken breast with cashew nuts

I didn't know about that, from now on I will refrain

I know it's not auchan, but it will appear in other stores, for sure. that's how it is with us, if it's a weirder product, it takes time for all the stores to be supplied. at first I found green pepper only at cora, now it is everywhere and at the neighborhood store.

Re: Chicken breast with cashew nuts

I also have a question ... could I replace cashew nuts with almonds and follow the same recipe?

It looks very good but cashews are a little nauseous in my opinion, that's why I ask

Ioana 8 years ago - 29 October 2009 15:05

Re: Chicken breast with cashew nuts

if you like almonds more, replace them. from my perspective, cashew nuts work better here because they taste stronger (it really seems to me that they taste smoky or something similar, almonds are a bit neutral) and are softer. but if that sounds nauseous, put almonds.

Zucchini stuffed with Greek-style chicken

The recipe for zucchini stuffed with Greek-style chicken is simple, delicious, but especially adaptable. Feta cheese can be replaced with goat cheese, if you prefer a real Mediterranean air, and if you are not a fan of dill, you can replace it with parsley without any problem. Vegetable tagliatelle with chicken and cashews

I don't like to make the same dishes. I was making vegetables in a wok with chicken and cashews, but I thought I would improve the recipe and something good, good and fragrant came out. Last night I had a kind of revisited Gong Bao chicken for dinner :). It also works for older children who can handle nuts. However, for children I would reduce the amount of salt and spices.

  • approx. 500g chicken breast
  • 2 zucchini
  • 4 carrots
  • 1 vanata
  • 3 sprigs of green onion
  • 1 red bell pepper
  • 1 yellow bell pepper
  • approx. 100g cashew nuts (raw)
  • 3 cloves of garlic
  • fresh ginger
  • Sesame oil
  • approx. 70-80ml soy sauce
  • salt (use Himalayan salt)
  • pepper
  • curry (I used Balti)
  • paprika
  • chili powder
  • caraway
  • Turkmen

Method of preparation:

  1. I washed the chicken and cut it into strips. I put it in a bowl and seasoned it with salt, pepper, curry, paprika, cumin, chili powder and sesame oil. I can't tell you the quantities because they depend on everyone's taste. I mixed the chicken well by hand. I heated a little sesame oil in a wok pan and sautéed the chicken. Do not keep it too long so that it does not become dry.
  2. Separately, I heated a little sesame oil in a pan and fried the cashews until golden.
  3. I got the vegetable tagliatelle with the vegetable peeler. I cut the onion into slices and peppers into thin strips. In a pot (they didn't fit in my wok pan) I heated a little sesame oil, I added onions and peppers, and after approx. 3-4 minutes I added the rest of the vegetables. I kept turning them until they softened, but they remained firm, slightly crunchy. I added a little salt and turmeric. Do not add too much salt because the soy sauce is already salty.
  4. When the vegetables were ready, I added the meat and cashews over them and left them on the fire for another 2-3 minutes.
  5. Separately, I prepared the soy sauce with garlic and ginger. I put on the small grater a piece of fresh ginger (about the size of a thumb) and garlic cloves. I mixed them with the soy sauce and added them to the food.
  6. I mixed well and served with gusto :).

2 skinless chicken breast fillets
4 eggs
4 tablespoons corn / flour
1 pinch of salt
300 ml walnut oil or sunflower oil
1 large onion
2-3 green onions
100 g leeks (white part)
2 large red bell peppers
1 cup chicken soup
3 tablespoons soy sauce
5 tablespoons cashew nuts
sea salt
white pepper

Beat eggs, add cornmeal (flour), a pinch of salt and mix well. Put the sliced chicken through the egg mixture and then fry it in very hot oil. Remove the chicken pieces from the wok, when they become golden, a little crispy and put them on a paper napkin, so that the excess fat is absorbed.

Finely chop the onions and leeks and fry them in the oil in which I fried the meat. Add the cleaned red pepper to cut into strips of the right size, then continue to harden until it softens.

Put the chicken pieces over the peppers and onions, continue to fry for 1-2 minutes, then pour the soup and soy sauce. Boil covering with a lid for about 2 minutes, then take the lid and leave until the sauce decreases.

Add finely chopped green onions and cashews, season with salt and white pepper, leave on the fire for another minute, then remove the dish from the stove.
